Marinades


Okay, so Safeway has continued its never-ending quest to stop carrying all the items I buy by dropping the McCormick's Zesty Herb Grill Mates marinade I use(d) when I Foreman-grill burgers. Anyone have a marinade they particularly like for burgers? It can be a storebought marinade or an improvisation. The only two that have really done anything for me as I experiment with new ones are the Safeway Select Honey Garlic and plain old Worcestershire sauce, and neither of them really blows me away. The Safeway Select Honey Mustard and McCormick's Teriyaki weren't all that good, and the McCormick's Mesquite flat sucks.

I like Dale's cut with water and olive oil. Dale's is too salty on its own for me.

Another great one for fish or chicken: juice a whole lemon, mince some garlic, add some olive oil and fresh-ground pepper. I use this one when I grill salmon. I've also added honey to the mix. It's great stuff--but you don't need to marinate it for more than twenty to thirty minutes.

As far as herby goodness, I prefer plain old Italian dressing.

Lately, whenever I grill pork or ribs, I've been making dry rubs. That's a whole 'nother story.

Big Lots here has McCormick Zesty Herb Grill Mates marinade for 99 cents a bottle--maybe you could find it in an outlet/box store...
I add Wishbone Italian dressing (packaged powder) to Worcester sauce and add then a shot of Merlot. That gets really close to Zesty Herb Marinade... Sometimes just the Worcester, garlic and a little Merlot is enough, especially if you are making bleu cheese burgers (my favorite).

I also like McCormick's Mesquite after I added a splash of orange juice. You might be surprised.
